SCRAMBLED “EGGS” (tofu) Recipe

King Oyster Mushroom (diced)
Veggie Ham* (fine chop)
Soy Margarine (1 Tsp)
Red Onion (diced)
Tofu* (med-firm, crumbled with fork)
White Wine (1 tbsp)
Sweet Red Pepper (diced)
Soy Cheddar Cheese* (cubed)
Fresh Basil (fine chop)
salt & pepper to taste

* for a non-vegan recipe use eggs, cheddar cheese and ham

Sauté mushroom and ham with margarine in med-heat skillet, add onions, cook 1-2 min. Mix in tofu and wine, cook and stir 2 min. Add pepper, cheese and basil and cook until cheese has melted.
Serve with fresh sliced tomato topped with EV Olive oil and a sprinkle of zahtar (a Middle Eastern spice blend made with dried thyme, toasted sesame seeds, and ground sumac) or a spice of your choice and a toasted multi-grain bagel or toast.
Of course, don’t forget some fresh-squeeze OJ and an Espresso (Lavazza).
