JimBo’s Global Spoon
Five Plum or Roma tomatoes
½ cup fresh basil
Fresh minced garlic (2 cloves)
¼ cup olive oil (cold-pressed – extra virgin)
Cut tomatoes in halves. With a small spoon, scoop out the seeds and the liquid. Dice the tomatoes into small chunks. Combine with basil, garlic and oil. Add salt (to taste) and let sit for 30 minutes. Serve on ciabatta bread or toasted French bread.
Oven Version: Bake in a pre-heated oven at 180C / 350F for 10 minutes.
Serve on ciabatta or focaccia bread.
Add 1/2 tsp of Balsamic vinegar.
Add 1/2 tsp of sugar.
Add sun-dried tomatoes or black olives.
Spice it up with fresh hot peppers.
