KHAO PAD KRAPAO JAE
Fried Rice with Chili and Thai Basil



This is a popular spicy Thai dish that combines Thai basil, chili peppers, rice and cubed firm tofu. PAD KRA PAO (without “Jae”) is a non-vegetarian/vegan version – tofu is replaced by beef, shrimp, chicken, lamb or pork. The spicy mixture is often served on a bed of white Jasmine rice.

As a fried rice it is called Khao Pad Kra Pao Jae “Kluk”. In Thai, “Khao” means rice and “Kluk” means tossed together. If you plan to visit Thailand, most restaurants will make just about any dish to your liking. If requested, a variety of veggies can also be tossed in.

Ingredients
3 tbsp cooking oil (soy, peanut or vegetable)
1 cup firm tofu (cubed)
2 cloves garlic (minced)
2 tbsp soy sauce (to taste)
1/4 cup fresh Thai basil leaves
1-2 Bird chili peppers (finely chopped)
3 cups Jasmine rice (pre-cooked)

Method
Heat 1 tbsp oil in med-hi heated wok. Stir fry tofu until golden. Add garlic and soy sauce – continue to stir. Remove and set aside. Heat remaining oil and add peppers. After 30 seconds add rice and continually stir-toss. Add tofu mixture and toss. Add basil. Remove and serve hot.
Serves 3 – 4.

Options
Add 1/2 cup Shiitake mushroom (finely chopped) with tofu. Add 1/4 cup cashews (unsalted roasted) before adding basil.
