Fried Wide Rice Noodles & Veggies in Thai Gravy
One of the most popular noodle dish in Thailand is Lad Na (Rad Na). This might be difficult to buy the ingredients needed to make it. This particular dish is a vegetarian version.
2 cup wide rice noodles (cooked)
2 tbsp cooking oil (soy, peanut or vegetable)
1 cup firm tofu
1 cup Veggies (Chinese kale, Shiitake mushroom, Chinese cabbage)
Lad Na Gravy
1 clove garlic
1 cup water
1/2 tsp cornstarch
2 tbsp vegetarian oyster sauce
salt and pepper to taste
Mix cornstarch in a small amount of water, stir until dissolved and milky. In a med-heat wok, heat 1 tsp oil and add garlic. Cook for a minute, add water and oyster sauce, bring to a boil. Add cornstarch mixture and stir. Remove sauce when it begins to thicken and set aside in a bowl.
Bring water to a boil in the wok and cook the wide rice noodles, strain and remove. In a dry wok, heat 2 tbsp of oil and fry noodles until brown or a bit crispy. Set them aside an pour Lad Na gravy on top so they don’t dry.
Next, stir fry veggies and mushrooms in Lad Na sauce. If you can find Chinese Kale, it is a must have veggie. Finally toss the noodles, veggies and sauce together for a few moments. Use more broth if you prefer it as a soup.
